Mac N' Cheese

What you might have at home:


8 oz macaroni
1 T butter
1 egg
2 ½ cups Mexican cheese blend
1 tsp salt
1 T hot water
1 tsp Dijon mustard
1 cup reduced fat milk
½ cup panko or bread crumbs
9x13 casserole
Non-stick cooking spray
Small bowl
Large pot
strainer


1) Preheat oven to 350˚.

2) Cook pasta until al dente and drain. Pour back into pot. Stir in butter, egg and 2 cups of cheese.
3) Mix salt, water and mustard in small bowl. Add milk and mix.
4) Mix leftover cheese and panko.
5) Spray 9 x 13 casserole with non-stick cooking spray. Pour in pasta mixture. Pour milk overtop. Sprinkle with panko mixture.
6) Bake for 25-30 minutes until set.


Variations: Use any kind of shredded cheese you prefer. I always use whatever I have on hand. Mix two kinds or three, it’s up to you.
Add 1 cup of broccoli to mixture and bake. I add whatever leftover cooked veggies are in my fridge.
Add 1 cup of cooked chicken and make it a meal!
