Family-Friendly Roast

I’m always trying to figure out ways to get my family to eat their vegetables. This is so easy and tasty, your family won’t complain!

What you will need:

1 kielbasa, cut into 2 inch pieces

1 large sweet potato, peeled and cubed into 1 inch pieces

4 medium russet potatoes, cubed into 1 inch pieces

4 carrots, peeled and cut into 1 inch pieces

1 sweet vidalia onion, chopped into 1 inch pieces

What you might have at home:

3 T olive oil

Salt and pepper

Mustard Sauce

2 T Dijon mustard

½ cup reduced fat sour cream

1 T water

1) Preheat oven to 500˚.

2) Cover two rimmed baking sheets with non-stick foil.

3) Spread potatoes, onion and carrots evenly onto sheets. Drizzle with olive oil, making sure potato mixture is evenly coated. Sprinkle with salt and pepper.

4) Roast for 15 minutes. Remove and toss.

5) Add kielbasa evenly onto each sheet. Rotate sheets and roast for another 15 minutes.

6) Remove from oven and let cool for five minutes.

7) Mix sauce ingredients in small bowl. Serve with roast.
