Easier than You Think Quiches

Whip these up for tonight's dinner party!  You'll wow your guests and you won't have to spend an arm and a leg.  They can munch on these while dinner's cookin'!
(makes 2 dozen mini quiches)

What You’ll Need:
phyllo dough, about 3 layers thawed, cut into 2’x2’ squares (or buy mini shells)
6 slices bacon, cooked, crumbled
2 cups cheddar cheese, shredded

What you might already have:
10 oz frozen spinach, thawed and squeezed dry
1 egg, beaten
3/4 cup milk
2 T flour
1 tsp Dijon mustard
Two mini muffin pans
Medium bowl
Small bowl
Non-stick cooking spray

1) Preheat oven to 350˚. Coat muffin pans with cooking spray.
2) Mix egg, milk, mustard in small bowl.
3) In large bowl, combine cheese and flour. Fold in spinach and bacon. Gradually mix in milk mixture.
4) Fill muffin pans with phyllo dough. Add spinach mixture into phyllo cups.
5) Bake for 10-15 minutes. Serve.
